When I have a small avocado I love to mix up this yummy spread and eat it with toast or fresh veggies for a quick and healthy snack. Not only are avocados tasty and filing, but they are packed full of nearly 20 essential nutrients including potassium, Vitamin E, fiber, folic acid, Vitamin C and iron. So tasty and good for you!
Here’s what you’ll need:
1 small ripe avocado
1/2 fresh squeezed lemon, or 1 TBSP bottled lemon juice
1 teaspoon EVOO (extra virgin olive oil)
1/2 tsp. sea salt
1/4 tsp. ground pepper
Cut avocado in half. Scoop out the avocado and discard the seed and peels. I like to use a potato masher to smash up the avocado. Add fresh squeezed lemon juice, EVOO, salt and pepper, Mix well. Spread on hot toast or use for veggies and enjoy. (This recipe makes enough for 2 pieces of toast.)
