Bran muffins! Just look at those yummy baked goods! They are the best ever — both healthy AND yummy — a perfect combo. When my husband and I were first married, we traveled up to Montana to visit his grandma. The next morning she pulled these yummy smelling bran muffins fresh out of the oven for breakfast, and I was sold. They also store well in the fridge, so you can make the full recipe, and grab one for breakfast on the go.
2 cups boiling water
4 cups bran cereal
1 pound of raisins
1 cup vegetable oil (OR 1/2 cup vegetable oil and 1/2 cup melted coconut oil)
2 cups sugar
5 cups flour (2 1/2 cups wheat and 2 1/2 cups white)
1 tsp salt
5 tsps soda
1 quart or 4 cups buttermilk
2 cups Bran Flakes
Pour boiling water over 4 cups bran cereal and raisins. Add sugar and oil. Then add eggs. Add all other ingredients saving buttermilk and bran flakes for last. Mix just enough to combine everything. Bake in greased muffin tins at 400 F for 15 to 20 minutes.
