Carrot Cake (Healthier Version)

I love Carrot Cake! Especially this Carrot Cake recipe that my sister-in-law brought to one of our family parties. This cake is moist and so yummy. I love that you can make it a little healthier by decreasing the amount of oil you and replacing it with applesauce.

2 cups sugar
3 eggs
1 cup vegetable oil
1 1/2 cups applesauce
1 tsp. vanilla
2 cups flour
1/2 tsp. salt
2 tsp. baking soda
3 tsp. cinnamon
3 cups grated carrots

Cream together sugar, eggs, oil, applesauce and vanilla. In a separate bowl, sift together flour, salt, baking soda, and cinnamon. Combine the two mixtures. Beat together until smooth. Stir in the carrots. Grease a 9×13 pan and bake at 350 for 45-50 minutes until knife in center comes out clean.  Let it cool. You can eat it without frosting, but if you do want to frost you cake, here’s a simple Cream Cheese Frosting recipe below.

Cream Cheese Frosting

8 oz. cream cheese, softened
1/2 cup butter, melted
24 oz. powdered sugar
1 tsp. vanilla

First cream the softened cream cheese. Blend with the butter. Add powdered sugar and vanilla. Beat until creamy and light.
