Grandma’s Sweetheart Valentine Cookies

ValentineCookies-JennyFordThese Valentine Cookies remind me of my sweet grandma. When I was a little girl, she used to make batches and batches of these delicious cookies for all of her grandchildren. They were the same cookies she made for her husband when they were first married. The thing I like about them is the subtle ginger flavor, they’re super soft and sweetened with honey. I keep the tradition alive by making them for my boys each Valentine’s Day. I think they love them as much as I do.

1 cup butter
1 cup brown sugar
1 cup honey
2 eggs
4 tsp. apple cider vinegar
1 tsp. ginger
1 tsp. cinnamon
1/2 tsp. cloves
1 tsp. salt
2 tsp. baking soda
6 cups flour

4 cups powdered sugar
4 TBSP butter
2-3 tbsp. milk to moisten
red food coloring

Cream butter, sugar, honey, and vinegar until fluffy. Add eggs, beating well. Mix in salt, baking soda, ginger, cinnamon, and cloves. Add flour and mix well. Remove dough from bowl, wrap in saran wrap, and chill for at least 8 hours. Roll our 1/2″ thick on floured surface. Bake at 350  for 10 min. Cool before frosting.

To make frosting, combine butter, sugar, and milk. Beat until creamy. Add a few drops of food coloring to get desired color.

I treasure this picture taken 2 years ago. She taught me to be strong no matter what life throws at you, that family is all that truly matters, and to use my gifts and talents to serve my children/someday grandchildren, and all those around me. I feel her close sometimes and hope I can honor her by living like her. ❤️
