Try a healthier twist for no bake cookies, with my healthy no bake cookie bites. Sometimes I don’t want to turn on the oven, and this recipe is super quick and easy to whip up. Packed with winning ingredients like banana, peanut butter, cocoa, and oats, they’re perfect to refuel after a workout or when you need a wholesome snack (considering they’re loaded with healthy carbohydrates and protein). My boys love them too! Always happy when I can get them to eat healthier versions of recipes.

2 very ripe small bananas, mashed or blended
3 TBSP coconut oil, melted
3/4 cup milk, or almond milk
3 TBSP cocoa
1 tsp cinnamon
1/2 tsp salt
1 cup brown sugar or 1 cup coconut sugar
2 tsp vanilla
3/4 cup natural peanut butter
5 cups oatmeal
Mash up bananas, or blend in a mixer until smooth. Add coconut oil, milk, cocoa, cinnamon, and brown sugar. Mix together, then pour into a large sauce pan. Cook over medium heat, stirring often, and bring to a boil.
Meanwhile, have vanilla, peanut butter, and oatmeal measured out and set aside. Once ingredients begin to boil, stir and let them boil for 3 minutes.
Pull the pan off the burner and add immediately add in peanut butter and vanilla stiring until blended smoothly. Stir in oats until they are well covered. Mixture should hold together well and will be very sticky.
Use a cookie scoop, or large spoon, and form 2 inch dough balls. Place on a cookie sheet covered in parchment paper or tin foil. Refrigerate for at least 4 hours and store in the fridge. Cookies will also freeze well too.
