These No-Bake Energy Bites are easy peasy to make. So every afternoon when I get the munchies, (along with my 4 boys), or post-workout, this recipe is a great option. Not only are they healthy, they help boost your energy, taste yummy, and can even be adapted for gluten-free diets. I usually double the batch so we’ll have a supply for a few days. (Did I mention my boys are always hungry?)
1 cup oatmeal (can use gluten free)
1/2 cup peanut butter
1/3 cup honey
1 cup shredded coconut
1/2 cup ground flaxseed
1 tsp. vanilla
1/2 cup mini chocolate chips
Form into small balls. Keep refrigerated in an air tight container.
